Toraya established a foothold in Tokyo in 1869, after the national capital was transferred there on the heels of the Meiji Restoration. At present, Toraya has three factories and approximately 80 shops throughout Japan, in addition to a boutique in Paris. Yokan Yokan is a bar of gelled sweet bean paste made chiefly of azuki beans, sugar, and agar-agar. It is one of the most traditional of Japanese sweets and has a long history. A drawing of yokan wrapped in a bamboo sheath is included in an illustrated encyclopedia dating back to 1712, showing it was already well-known back then. Made from carefully selected, high-quality ingredients, and cooked with great patience and skill by wagashi artisans, yokan is one of Toraya’s most popular products. Toraya’s signature yokan have a long shelf life of one year. It is currently one of Toraya’s most popular products. ●Petite Yokan Omokage: Reminiscence (Dark brown sugar) Made with kokuto, an unrefined dark brown sugar similar to molasses that awakens nostalgia for an earlier era in Japan.
